Broccoli and Lemon Penne Pasta

Spelt pasta is more alkaline than rice pasta and CERES Shop sells it cheap in bulk. Make sure you have more sauce than pasta so the dish isn’t too dry.

1 cup of spelt/gluten-free penne pasta
2 small broccoli heads
Handful of peas
2 garlic cloves
1 small zucchini
1 tomato
1/2 a red onion
2 handfuls of rocket and/or spinach
Juice of 1 lemon
Olive oil
Salt & black pepper to taste

1. Start cooking the pasta.
2. Chop all of the greens to a size and shape you like.
3. Very lightly fry the broccoli, peas, garlic, red onion and zucchini in the olive oil.
4. Once the pasta is ready, drain and add into the pan with the greens, add the chopped tomato and rocket and stir in the lemon.
5. When you’re ready to serve, put it all in a bowl and drizzle with olive oil, add salt and pepper to taste.
