Yes, it’s true, pesto just isn’t the same without Parmesan Cheese. But this baby comes a close second.
2 bunches of fresh basil
1 bunch of fresh coriander
1 cup of pine nuts
2-3 cloves of fresh garlic, peeled and crushed
3 tablespoons of olive oil
1 teaspoon of honey
Juice from half a lemon
Wash and clean basil and coriander. Blend herbs in food processor with the pine nuts. Add the remaining ingredients and pulse into a thick and creamy paste. This dip/sauce is awesome by itself but add soy cheese if you are so inclined.
