Snowpea and Asparagus Salad

Note:
This salad is really, really yummy and you could add all sorts of other greens to it. Next time I make it I think I’ll add sugar snap peas and green beans too.

Ingredients:
2 cups of snow peas
2 bunches fresh asparagus
1 cup of spinach (or rainbow chard)
A few leaves of lettuce
½ cup of walnuts
Juice of 1 lime or lemon
Olive oil

Instructions:
1. Very lightly steam or microwave the asparagus and snow peas so they are cooked but still crunchy.
2. Let these ingredients cool slightly while you mix all of the other ingredients into a large bowl.
3. Add in the asparagus and snow peas, and season with olive oil and the juice of one lime / lemon.
