Dairy-Free, Yet Creamy, Vegan Guacamole

Note:
The white beans in this dip make it creamy, avoiding the use of dairy products. You could use a soy cream cheese like ‘Tofutti’ if you wanted to use less beans.

Ingredients:
1 cup of white beans (canned or pre-cooked)
2 ripe avocados
1/4 red onion, finely chopped
Juice from one lemon
3 tablespoons of fresh coriander
1 tablespoon of olive oil

Instructions:
Blend all ingredients together in a food processor.
