This morrocan salad is very refreshing on a hot Summer’s day.
5 Lebanese cucumbers
1/4 cup finely chopped fresh mint
1 tablespoon of lemon juice
2 tablespoons of olive oil
1. Finely peel the cucumber and slice thinly into rounds.
2. Add cucumber and mint to bowl.
3. Combine lemon juice and oil, mix well.
4. Pour dressing over cucumber slices and mix.
Some people like adding some orange juice and orange flower water to the mix (I just don’t because oranges are acidic).
