I wanted to make another salad for our Moroccan feast and had heaps of carrots in the cupboard. And so, this salad was born!
3 grated carrots
1 handful of sultanas
1 teaspoon of apple cider vinegar (not too bad on the stomach)
1 teaspoon of ground cumin
1. Combine ingredients in a bowl. Done!
As an after thought, I might put slithered almonds or walnuts in it next time.
I thought I was being originale, but it turns out there are plenty of recipes for carrot salad on the net. But I promise, I didn’t steal anyone’s recipe!
