Strawberry Salad

This recipe was introduced to us by some Canadian friends, many years ago. My Mum recently reminded me of it and generously typed it up in an email. It’s easy and delicious, a nice break from garden salad and treat for those who don’t eat tomatoes.

Enough baby spinach to fill a large bowl (4-5 cups)
12 (about a punnet) sliced strawberries
1/2 cup of slivered almonds
1/4 cup of apple cider vinegar (can use other types but quantity will change)
1/4 cup sugar
1 tablespoon of sesame seeds
2 tablespoons poppy seeds
1 teaspoon of minced onion (optional)
1/4 teaspoon paprika

1. Wash spinach and place in large bowl.
2. Sprinkle strawberries and almonds on top.
3. In a separate bowl or cup, mix apple cider vinegar, sugar, sesame seeds, poppy seeds, minced onion and paprika to make dressing. You may need to adjust quantities to suit your taste buds.
4. Add dressing to salad before serving.
