Mexican Corn Salad

Perfect by itself or in tacos (http://vegematarian.com.au/2011/05/17/taco-taco/). Sweet corn is starting to come into season and  it’s truly yumma-licious! Don’t buy the canned stuff when you can get it fresh!

Ingredients:
2 sweet corn cobs, carefully cut kernels off cob
2 tomatoes, cubed (optional)
1 red capsicum, sliced
1 red onion, finely sliced
1/2 lettuce, sliced
1 avocado, cut into cubes
Juice of 1 lemon
2 teaspoons of flax seed oil (or olive oil)
1 teaspoon of cayenne pepper
1 teaspoon of dried garlic powder
1 handful of fresh coriander, finely chopped

Instructions:
1. Chop up all vegetables and add to bowl.
2. Create dressing by combining oil, lemon juice, cayenne pepper, garlic powder and coriander.
3. Pour dressing over salad and toss until your heart’s content.
