Moroccan Quinoa


Note:
Quinoa (pronounced “keen-wa”) is an ancient grain which can be used like couscous in Middle Eastern Dishes (and it has many other uses too). This week, I cooked a Moroccan Vegetables with Black Eyed Peas (see recipe here — http://vegematarian.com.au/2010/03/21/morroccan-vegies/) and yet again I made a version of ‘Moroccan Couscous’ using quinoa instead of couscous (which is made from wheat).

This time, I added more cinnamon to the recipe as well as almonds and sweet potato. It was really yummy! I ate it as a salad the next day and it was great cold too.
