Soba Noodle Salad Dressings

Soba noodle salad has become a staple in our household. We eat it at least once a week for lunch or as a dinner accompaniment. Here are some dressings that I use to add variety, which can be used for a salad that uses 270g pack of soba noodles.

SHOYU DRESSING:
3 teaspoons of sesame oil
2 tablespoons of tamari or gluten-free soy sauce
2 tablespoons of Japanese mirin

GINGER DRESSING:
2 tablespoons of Japanese mirin

1 teaspoon of tamari or gluten-free soy sauce
1 tablespoon of rice wine vinegar
2 teaspoons of finely grated ginger

LIME DRESSING:
1 lime, zest and juice

1 tablespoon of finely grated ginger
1 tablespoon of honey or brown sugar
1 tablespoon of  Japanese mirin
1 tablespoon of sesame oil
3 tablespoons of tamari or gluten-free soy sauce

MANGO GINGER DRESSING:
½ cup fresh mango
1 teaspoon sweet chili sauce
2 teaspoons water
3 teaspoons sesame oil
½ teaspoon of finely grated ginger

INSTRUCTIONS FOR ALL:
Mix in a bowl and pour over salad.

    These are super easy, I love it! Soba noodles make we wish I was back in Japan. I’ll have to give your suggestions a whirl 😉

      Tasting soba noodles takes me back to our time in Japan too. A little bit of Nippon in Oz! 😉
