I love mint in a salad. It’s super easy and super fresh. Yum yum yum yum!
1 large cucumber, cut into rounds and then quarters
2 handfuls of fresh mint
A couple of handfuls of your favourite greens from the garden – I used lettuce, kale and spinach
Dressing – the juice from 1/2 a lemon and a drizzle of extra virgin olive oil
Chuck it all together in a bowl and drizzle the dressing over the top. Done!
